Summary. This paper develops and applies a singlet oxygen absorption capacity (SOAC) assay to measure antioxidant properties of carotenoids and vegetable extracts. Researchers tested eight carotenoid types and extracts from red paprika, carrot, and tomato, determining reaction rate constants and SOAC values. They found that the total antioxidant activity of vegetable extracts directly correlates to the combined contributions of individual carotenoids present, validated through HPLC analysis.
