Fortified Sorghum as a Potential for Food Security in Rural Areas by Adaptation of Technology and Innovation in Sudan

Summary. This paper proposes fortifying sorghum with soybean and wheat to improve food security and nutrition in rural Sudan. The authors develop local processing technologies to produce fortified sorghum products tailored for different populations—adults, children, infants, and pregnant women. They demonstrate through literature review and testing that rural soybean production is feasible and that simple fortification methods can enhance the nutritional value of traditional Sudanese sorghum-based foods.
